Question How to convert analog sound to a midi sound patch?

I saw a digital music performance where the musician use a pigeon sound and play it with his keyboard, so the pigeon sound becomes the instrument and he plays it with his full 88 key keyboard making the pigeon sound to play 88 different keys.

How can I do this? I am completely new in digital music.

I am bored with my onboard MIDI sounds and want to record all sorts of analog sounds to replace the MIDI vibraphone sound that I have been using.

My tools are:
-Medion laptop, 8 gb ram, windows 7 home professional 64 bit.
-Cakewalk Sonar X2 as digital music composer software
-Ashton UMK62 usb midi controller (just ordered it online, not arrived yet)
