Final Fantasy series. I was captured by the melodies of parts 8,9 and 10.
Metal Gear Solid. The theme is ear candy. ^^

Yasunori Mitsuda is very underrated being in the same company at the same time as Nobou Uematsu does that. But, no reason to discredit his practically equal genius(He was also the sound designer for the majority of square games during the SNES days. Where Uematsu may have written many of the scores, he's the one responsible for adapting it to the technology, so probably contributed a lot to the tone. He did the same for FF7).

I think he's ingenious. Chrono Cross may be the most advanced, variant, and mature soundtrack of any videogame. Plus, both Xenogears, and the first Xenosaga(actually performed by the London Philharmonic Orchestra) are also fantastic.

Terence Hill, as recently confirmed during an interview to an Italian TV talk-show, was offered the role but rejected it because he considered it "too violent". Dustin Hoffman and John Travolta declined the role for the same reason. When Al Pacino was considered for the role of John Rambo, he turned it down when his request that Rambo be more of a madman was rejected.

Red Dead Redemption had a good soundtrack.

I love it when Jose Gonzalez kicks in when John Marston gets to Mexico.

Obviously GTA, for it's variety and selection of great tracks.
Tony Hawks Underground 2 had an incredible soundtrack, and provided my first introduction to a number of artists including The Doors, Less Than Jake, Steel Pulse and even Frank Sinatra.

Also, Fallout 3 and New Vegas. Never thought I'd be listening to 1940's music. But, there you go.

I really love the Mazzy Star song they they used for Gears of War 3... I think it suited it.

I'm pretty sure in one of the Gears of War games they also used the 'Mad World' piano which brought me to tears during the scene...

Gears of War 3.
It was easily the best in the series.

Also, I love the Super Meat Boy soundtrack. Danny Baranowsky is amazing.

And the Bastion OST is phenomenal...

Splinter Cell Chaos Theory's soundtrack was entirely done by Amon Tobin who is one of my favorite electronic artists. Very good soundtrack. This song builds very well into the end and in the game different layers of music would be triggered depending on what's happening.
