I really liked the soundtrack to Donnie Darko. The rest of the soundtracks that come to mind are all from musicals, but I'll say them anyway.

Can't believe the soundtrack for Les Triplettes de Belleville hasn't been mentioned yet... GREAT music! (Great movie too! I highly, highly recommend it!)

The soundtrack to Amelie is also amazing...
Yann Tiersen definitely deserves all the credit in the world for that one. Actually, it was Amelie that ultimately introduced to me him and made me look further into his work. Another good soundtrack is from Les Choristes. For those not already familiar, it's a french film about a man sent to work at an all boy's boarding school, and while there he forms a boy's choir. Bruno Coulais is responsible for the musical scores...very beautiful songs...so angelic...
