Does anybody dig The Meters around here? My favourite funk tracks would have to include:

Cissy Strut / The Meters

Hand-Clapping Song / The Meters

Sing a Simple Song / Sly & The Family Stone

My favourite Soul songs are a bit trickier

Chain of Fools / Aretha Franklin
Sittin' on the Dock of the Bay / Otis Redding
Its Groovin' Time / Otis Redding
What's Goin' On / Marvin Gaye
Inner City Blue / Marvin Gaye
Get Down / Curtis Mayfield
Little Child Runnin' Wild / Curtis Mayfield
La La La La La La Means I Love You / The Delfonics

Personally I think there's often a lot of overlap between funk and soul. A lot of music that isn't strictly funk can be extremely funky.
