Excellent! I'd suggest listening to It still moves and Z which are widely considered as their best albums. They are both chock full of great tunes and I think any rock fan will definitely enjoy their extended instrumentals/guitar solos which are some of the best of the modern rock era. They have some good songs on other albums as well but if you don't feel like wading through all of their discography to find them and you have spotify, I've put together a "best of" playlist (ISM and Z feature I think almost in their entirety).

I'm not a fan of ELP (Emerson Lake and Palmer) I have to admit; Neapolitan is your man there. If you like a mixture of rock and classical with some blues, then you may enjoy them. I believe a very high percentage of their music is instrumental, though I'm no expert on them, but I think that's how they rolled. As I go through the history of prog rock in my journal my opinion of them may change - I didn't hate their debut which I recently reviewed - but I don't think I would ever be a fan of theirs.
Delighted to hear you loved Out of the Blue - fantastic album and a real classic. For a slightly more modern ELO try these:

That's perfectly valid. Femme Fatale is an amazing song, one of my favourites on the album

Hey ER, since you like "Femme Fatale" I wonder what you would think of Nico's first solo album. Nico's subsequent albums are darker, but Chelsea Girls is more melodic and chamber-folky. "These Days" is one of my favorite songs of all time.

A lot of people will concentrate on one or two favourite songs from albums and never listen to the rest. It's no crime. Listen to what you enjoy. The only thing I would say is that if you like a song by a band you may - not always the case but you may - like others on the album. Of course, it also happens that that song may be the best/only good song on the album, and listening to the album then disappoints you. Entirely up to you: again, I'm no VU fan. No ma'am, not me.
As far as ELO goes, in order I feel the best albums are: Out of the Blue El Dorado Time Discovery A New World Record Secret Messages Face the Music Zoom Xanadu (split with Olivia Newton-John, otherwise it would be higher, but still worth listening to). (I can't remember/am too lazy/busy to check if I already posted some of these, so bear with me if so) Spoiler for ELO tracks:
