Light My Fire, simply because it's as good a pop song as you will ever hear which is pretty impressive considering the 5 or so minute jam in the middle.

Well, The End is the obvious choice for me. Also, many tracks on their Waiting for the Sun album are my favorites (I love a more psychedelic sound of that album) like Love Street, Summer's Almost Gone, Not to Touch the Earth, Yes, The River Knows ...
