If you enjoy Nightwish, you should check Epica, similar
If Apocalyptica, than try another metal bands with cello - Angher, Hevein.
Maybe you may try also Haggard, Therion, Diablo Swing Orchestra.

I think you should check out,

Emperor's In the Nightside Eclipse - This album is one of the greatest black metal albums of all time in my opinion and I think that's shared with plenty of people throughout the black metal world. I highly suggest it if you're into black metal.

Ancient Bards - Only have one release but its thought of very highly by power metal listeners. So I would suggest trying it out. Not sure if its your thing but you never know maybe you will dig it.

Avantasia - Another power metal band you might like that's very Symphonic.

Pathfinder - A brand new band making a lot of noise on the power metal scene.

Rhapsody of Fire - Yet another power metal band.

Okay, I'm starting to get into the whole metal thing.

I have Opeth's Watershed and I plan to download/buy Iron Maiden'sNumber of the Beast. Any other recommendations/suggestions?

All the bands you've mentioned are great recommendations and choices, one I would suggest are the innovators of Metal, in my opinion. JUDAS PRIEST.

I believe Black Sabbath is ranked as #1 in certain polls as the most influential band to the metal genre, with Priest 2nd. Which of course I disagree, Judas Priest should be #1, but that's just in my world and opinion. These two bands are more Heavy Metal, than bands of the more modern sub-genres of metal. Ozzy Osbourne's solo career is probably my favorite of all of the others, from the early 80s and so on. He's produced some great guitarist through the years, and each one has their own unique style that is different from each other.
