I think one of the pirates is playing an accordion in Peter Pan, I can sort of remember Hook getting annoyed and shooting him...

Heh well I know no references but I can easily picture pirate metal with an abundance of accordians so I think I get what you mean.

Im just wondering what defines pirate metal. It would appear that a lot of Viking metal is defined largely by the lyrical content or else it would just be melodic/death metal.

Actually it does exist. Check out Zenithrash, Shuriken Cadaveric Entwinement, and Mononofu.
