Post-metal is expansive instrumental metal in the vein of Isis, Jesu, Gregor Samsa, et. al. Occasionally bands will throw in vocals, ranging from epic yellscreams to hushed talking.

In simpleton's terms:
post-rock + metal = post-metal

If you're looking for a place to start, I'd recommend their newest, In the Absence of Truth. After that, move on to Oceanic, then Panopticon, although all their albums are great. Grab them from me on Slsk.
