Hard to recommend just one. They're all equally good, I don't think he ever put out a mediocre album. If you check out any one of these albums, Equal Rights, Wanted Dread and Alive, No Nuclear War, Legalize It, Bush Doctor, Peter Tosh Captured Live, Mama Africa, and Mystic Man, you'll probably like it.

My highest recommendation would be to watch the documentary Stepping Razor Red X. That's what got me into Tosh's work more than just listening to any one individual album.
It might be my favorite music documentary ever.
