I cant really decide on one particular favourite album, but the first 3 albums by Ice Cube are ones I truly enjoy listening to. And I used to like Eminem, but after a while I realized how boring and vulgar he can be.

DJ Krush & Toshinori Kondo - 記憶 (Ki-Oku)

More of a nu jazz-y release, but definitely stays true to instrumental hip hop. As for one with rapping on it, my favorite is probably Madvillainy - DOOM's flow and Madlib's production are just legendary on it, but anything I could say has been mentioned before.

Is this the album from 2011 with a Japanese producer and multiple MC's?

This appears to be what I'm thinking of. Pretty similar to the one you described. A posthumous release from producer Nujabes called Spiritual State.
He was a japanese "nu-jazz" (whatever that is) producer who lays the beat with a variety of hip-hop acts lending verses. A friend of mine was banging on about this two years ago but I never got round to listening to it.
Might listen to both this and the one you recommended.
