Well if a band changed for the worse I would just say they "tanked." I generally think of bands hitting a plateau, where from the start they increasingly got better (making & innovating music) to leveling off with nondescipt music (nothing too exciting or groundbreaking, neither really extraordinarily good nor bad).
To me a quantum leap would be when a band would create something epic, like Yes with Close to the Edge or Pink Floyd with Dark Side of the Moop.
