Finally tried to start watching the show, but literally every single link I try is basically unwatchable (it's like watching stop-motion). My computer runs pretty well and I haven't had many problems streaming shows before. Any recommendations? If not, I might just pick it up on DVD, or see if the library has them.

You're welcome. Like I said, don't feel pressured to remember every character, just the important ones. Martin seems to spend a lot of time describing and establishing thug characters like the Kettleblacks, but I honestly can't remember all their names or their relationship to the plot. So long as you know who the main players are you'll be fine.
That's good then I will just focus on the main characters I already know and after I've read it once ill read it again to absorb more of the detail. Apparently Martin has a database where he has all the characters and their details and traits that he can refer to when he's writing.
