This first playthrough I'm trying to experience everything, including the Dark Brotherhood and Thieves Guild and Companions etc. Doesn't really make me a good guy, but whatever, haha.

No, there are two very minor differences that are the result of your chosen character. 1) Some people will recognize your race and add their opinion on it (from experience, Skyrim natives don't seem to like Dunmer very much ) and 2) each race gets their own little special skill.

Certain races also get a headstart on certain skills too, but those can easily be compensated by just overusing the skills you want to boost. It's definitely not like Oblivion where your chosen race/astro sign kind of locks you into a certain playstyle

There is actually a big problem with what you've said above concerning Skyrim. I've been looking at a map of Skyrim and its not bordered at all by the Aldmeri Dominion! Cyrodiil and High Rock border it and they are part of the Empire, Morrowind belongs to the Dark Elves and Hammerfall belongs to the Redguards. So based on this they couldn't be involved in a war on two fronts, unless I'm missing something here.

Read the Thalmor Dossier on Ulfric. They're using him to weaken the Empire.
The best option is to try and make peace between the two in order to strengthen Skyrim.

I'm siding more with the Stormcloaks at the moment because from what I've gathered the Imperials have been infiltrated by Thalmor, who are just a bunch of arseholes.

Stormcloaks I think represent the rightful stewards of the land, Imperials represent industrialisation.

If anyone wants to join my facebook page I started for Skyrim go for it. I'm trying to get a Universal video guide going, basically where everyone uploads videos of playthroughs.

Ah, for some reason I thought the Aldmeri were a lot closer! I see Summerset Isle is actually quite far from Skyrim on the world map.

Really? The Stormcloaks only make up a portion of the Nords in Skyrim, a portion which actively opposes the other. Do they have more right to Skyrim than the Nords who support the empire?
That's what I'm still figuring out, are they just like a stubborn rebellion against modernisation or are they actually fighting for their homeland?

From what I learnt so far, the Imperials expanded into Skyrim from Cyrodil after outlawing Talos worship.

I'm not gonna worship Talos but the dude deserves respect for saving Nirn from Oblivion crisis, it's not right the Imperials outright censor him and pay him no respect as a hero.

He's pretty much Elder Scrolls Dragon Jesus. If you ignore that, you're just setting Skyrim up for Oblivion crisis mach 2.

So is there any way to pay off your debt with the thieves guild or anything? I'm wanted really badly in falkreath i think, but i have some glitch that wont let me go to jail or pay off my debt to the guards.

As far as I know, the empire never invaded Skyrim. Skyrim sided with/became part of the Empire peacefully.

Talos was the man Tiber Septim who founded the empire. He's supposed to be the greatest human hero there ever was and - as its founder - is obviously revered by the empire at the time of Skyrim (the game), just not as a deity. Prohibiting Talos worship is part of a peace treaty between the empire and the Aldmeri Dominion.

I thought Cyrodiil was depressingly small (it's like one valley/crater with one big town in the center) and Skyrim to be larger. I believe the size of the game world is actually similar for Oblivion and Skyrim, but Skyrim feels larger to me, perhaps because it has more "nooks and crannies" or how you spell it
