From what I read (and I am not a historian, for the record) the amazing Deadwood had period correct talk, or at least was as close to period correct as any movie/tv series got.
I loved True Grit and the way people spoke there very much reminded me of Deadwood, without most of the cursing. And with thicker accents.

True Grit the remake was pretty good. And **** you all who spoke bad of John Wayne. He was in one of my favorite movies of alltime Flying Tigers, so suck it.
