Watch the movie again and focus on "the american dream" and how they make fun of it. I'm having to write a paper on it in my college composition class and its actually one of the hardest things i've had to write because of how hard it is to see the themes and symbols.
I haven't seen it in ages so I'm a little rusty, but I was going to come in and say something like this. It isn't just some pointless drug movie, it's a look at the "American Dream," and the fall of a lot of ideals that people held onto in the late 60s.

He did the animation in that movie [Monty Python's the meaning of life, directed by Terry Jones]

^ I watched Terry Jones' and Gillliam's commentary on that part of the movie. Gilliam was really carried away by this project. This part alone needed 6,000,000$. Hilarious. And they were already over budget.

Ok this is weird because Brazil and 12 Monkeys are also films I've been wanting to see for a while. And of course Monty Python is awesome

I'm waiting for the release of The Imaginarium of Doctor Parnassus, that one should be great.
I think Brazil is my favorite Gilliam movie. [or it's a tie between Brazil and Fear & Loathing]

Yeah, 60% of the films budget went into that short.

The fact that it's so over the top is what I love about it. And while The Meaning of Life was a very funny movie throughout, nothing had me cracking as many smiles as that opening short.

Where the Buffalo Roam is better, as Fenix said a while ago. Bill Murray captures HST as a whole, whereas Depp seemed to be focused on just the real screwed up parts of him.
I've also seen some others movies about him/starring him briefly:
