Ive never been to a place in the US that doesnt ask how you want your burger cooked except for fast food. It's surprising to hear it's not the same in the motherland.

The cut of beef remains the same regardless of how it is cooked though.

They'll give you old cuts of meat because you won't notice it when they overcook it.

Medium isn't overcooked. And if it was old you could tell.

If it was starting to turn then you could taste that more easily when it's rare. Only applies to steaks though, pretty sure they use the same meat for burgers.
