are you supposed to eat the "shell" around it or just the meat inside?

i hate liver and kidney as well

I've never had it inside a sheep's stomach but no I don't think you do.

You boil it in it's casing then slice the casing and scoop out a serving.

I wonder if it'd be good in a corn husk like a tamale. Dig me some kidney and like liver when it's done well so I'd probably be into it.
