These mashed potato croquettes look really good.

It would definitely have to be grilled, which is exactly what I did (with leftover thanksgiving turkey and some other junk I don't remember). I guess it wasn't that terrible, but the texture of the mashed potatoes was a problem. I think it would be better with the thicker/coarser type of mashed potatoes, too, as I mentioned in my previous post. I can't decide whether cheese would be a good or bad idea, but surely it couldn't hurt. (But what kind of cheese?? Maybe gouda?)

I was thinking more that you'd pre-mix the meat with the potatoes rather than just adding the potatoes in a glob format.

Hmm, yes, can't have potatoes in a glob format after all. This is a science. And now that I think of it roast beef does sound like it would be ideal with mashed potatoes. Or corned beef, even.

I'm thinking about this and how I don't have any potatoes or roast beef and I'm dying here.
