The chai you get in most places is just sugary milk with chai powder. There was this joint in Montreal ages ago where a couple of Indian guys brewed truly amazing chai. If it was sweet you didn’t feel it cause the spices were overpowering and it had a texture that wasn’t milky. It felt like you were drinking a really great drug, like the spices were so powerful they were basically drugs. Obviously it was too good for this world and closed down after less than a year.

Yes, definitely Indian-made chai is the way to go,
but I haven't dined in a restaurant since Feb. 2020,
so I've really upped my time in the kitchen making
from near scratch. Plenty of good Indian grocers here
so it's easy to get stuff. Good solid black tea with
various amounts of ginger, cinnamon, cloves, pepper,
fennel, cardamom, nutmeg ... and I sometimes use
vanilla soy milk. Liquid Planet also makes a good one
called "Mumbai Chai" that's fast and easy too.
