Had forgotten to take a Photo of the finished Meal ~Stew on Plates with the all important Dumplings...I got my new camera out in a flash...Husband promptly moved backwards still hanging desperately on to his Spoon....Glad he knows his Place!!!

Planks Crock Pot Chicken Corn Chowder

Ingredients:
  • 1 pkg boneless chicken breasts (about 1-½ - 2 lbs)
  • 1 large can Cream of Chicken soup (26 oz)
  • 1 pkg chicken gravy mix
  • 2 cups chicken broth
  • 2 tbsps. garlic powder
  • 2 tbsps. onion powder
  • 1 tsp. thyme
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • ½ can beer
  • 1/3 pkg cream cheese
  • 1 can fire roasted corn - drained (14 oz)
  • 1 can mixed peas and carrots - drained (14 oz)
  • 1 can diced potato’s - drained (14 oz)

Directions:
  1. Turn crock pot on high.
  2. Mix all spices and place in bottom of crockpot.
  3. Mix chicken broth and gravy in a large cup.
  4. Place chicken on spices.
  5. Cover chicken with large can of soup, gravy mix, and beer.
  6. Cook covered on high for 3 hours.
  7. Open crock pot and break chicken apart into small pieces.
  8. Stir in cream cheese.
  9. Pour in cans of veggies/potato’s and stir.
  10. Cover and cook for 2 to 3 more hours.
  11. Serve with sour dough bread. *optional but tasty*

Just done that and it is amazing how much you can scrape and repair a dish or two....the smell can give it away though...

Lamb Casserole from last week..left over lamb sliced Add part cooked carrots, a Tin of Tomatoes with Juice, Onion and some Gravy so it is covered.Cook for about an hour+, although sure that could go in a crock pot....Add cooked potatoes sliced, after the hour of cooking, add on the top and cook until crisp. Photo shows before cooked and the potatoes have yet to be added.

Shrimp creole. Butter and flour until you get a Peanut butter colored roux, add onions, green pepper, celery. Cook for awhile, add garlic. Add Thyme, oregano, bay leaves, hot sauce. Mix shrimp with creole seasong and add. Serve over rice with parsley and scallions.
