I learned a bit about it living in Asia. I’m not skilled enough to make it look nice but it rocks in stews and stir fries. You don’t have to be an expert. It just naturally aborbs flavor and adds healthy bulk.

Can confirm that Pei Wei has better tofu than a lot of upscale restaurants.

Best tofu I ever had was at some hole in the wall Thai place in DC that I can't for the life of me remember the name of. It was fried, puffy, and when you bit into it whatever broth it was in just gushed out. It was so good, and I'm upset I can't remember where it even was exactly.

I'm still of the opinion that stir fry anything is basically cheating in a good way.

One time I went to restaurant in Japan that only served tofu cooked all kinds of ways. Gimmicky I know but it was pretty amazing.
