My dad's gf used to make lasagna with eggplants as a replacement for meat. What you get when you let a Vegetarian Jew make an Italian dish.

Idk how to cook with eggplant besides parm or grilled/roasted otherwise it would probably have made the list. I can ditch the cabbage for some zucchini though.

They're especially fantastic when you roast them with some rosemary, olive oil and then put a little sriracha on them afterward.
