Because I don't like the government having that kind of authority over my body/person. Part of the same reason I'm against the death penalty.

It's also a serious lack of education. You grow up hearing things about how one drop of mercury can cause dangerous contamination in a giant mass of water and how mercury thermometers are no longer used because they are dangerous, and then people find out an organomecurial is used as a preservative in a vaccine being injected into their body which immediately causes concern.
