He's dropping seemingly hundreds of feet through the air, dropping down onto the bike. How is he/the bike not utterly destroyed from the impact?!

Aerodynamics and great shocks. You wouldn't believe the amount of technical preparation goes into his stunts. An ex-coworker was one of the tech advisers on this stunt he did in Vegas a few years back. They did months of prep, simulations, and practice runs prior to the actual filming.
