Just plug your phone into your computer and open the phone in windows explorer. Treat it just like any other device you connect like an external hard drive. Then open the phone and browse through to the things you want to get and copy and paste them (or drag and drop them) to where you want them on your computer.
If you're having probs playing videos recorded by your iPhone then do a search for converters that will change the video format. There's no need to bother with iTunes, it a terrible piece of software.
