So why does saving stuff on an external hard drive take up space on my actual hard drive and can I stop that ****? Is it just indexing?

It's probably a program saving appdata to your install drive.

If you right click on the file you saved and click the Previous Versions tab, if it doesn't say that there are no previous versions available, and you see a bunch of file versions, it could be that you have shadow copies enabled and they're saving on your main disk. Normally you'd have to tell shadow copies where to save that kind of thing but I don't know you nor the fingers that been all up in your computer.

Anyone have any experience optimising Mojave so it doesn’t feel like wading through quicksand? Was forced to update when Steam dropped support for my older OSX and my computer has been running like crap ever since. Seems to be a five second delay before it does anything.

I think Mojave works best when you side with the NCR.
