A friend of mine had a job where he matched google search requests done with voice input with the words that were eventually recognized.
There were quite a few funny ones, but my favourite is: Woman being screwed by stark-naked horse.

I imagine it's to improve the accuracy of a voice to text application.

Data input/entry jobs are very common. Look them up, you can work from home.

I know that. I was wondering why he has to input into speech to text. What the purpose of the job is?

He checked whether it was recognized correctly, so that the recognition software could learn from its mistakes.

I wouldn't put it past him. Although I doubt one person screwing things up could really lead to reproducibly funny results.
