Caramelized mushrooms and onions (sauteed in butter and garlic and balsamic beforehand), maple bacon, apple or pear, spinach, pesto, and peppers of any kind. Usually I do two kinds of cheese. (And good quality bread ofc) I like gouda and muenster together especially. Edit: I also loooove pulled pork on grilled cheese though at that point I suppose it's just a regular pulled pork sandwich. I always use Mayo. Thin sliced ham and some Velveeta are the go-to's for me.

Dangerous stuff tbh. Could easily eat 5 or 6 pieces of cheese on toast done that way and become fat very quickly.

I usually go with the ol Chedder and crisp it up a bit.

Cheddar is a solid cheese.

Goes with most things you could use other cheeses for and will do the job well. Some cheeses may do individual things better (mozarella/pizza, parmesan/pasta, processed cheese/burgers and so on), but cheddar is the top all rounder, for me.

A small amount of American cheese is perfectly fine when added to homemade macaroni & cheese or something like that (I find it helps the texture a little bit without really affecting the taste.)

Alton Brown's stovetop macaroni & cheese recipe is the simplest to start with, probably (and I suppose the evaporated milk in the recipe is what prevents a grainy texture?)
I think the last time I made macaroni I just started with a white bechamel sauce and went from there. I think I did gouda + sharp cheddar.)

I learned how to make dope oven baked Mac n Cheese from Good Eats as a kid, was cool.
