To answer your question, I can see someone dipping chips (the UK version or the North American version) into mayo. When I worked at Rotten Ronnie's, the girls would dip their fries in the McChicken sauce, which is mostly mayo.

If available I'll grab mayo, ketchup, cheese, and BBQ sauce and have 4 flavors for dippin' fries. Variety pack.

You go all out! For fries, give me salt and vinegar. As an alternative, I'd go to this place in Kingston called the Copper Penny. They dip their fries in chicken noodle soup mix after frying them. DAMN that is so good.
