I mean yeah, but I've just never had any reason to think that American cheese would work on anything but a cheeseburger.

Alton Brown's stovetop macaroni & cheese recipe is the simplest to start with, probably (and I suppose the evaporated milk in the recipe is what prevents a grainy texture?)
I think the last time I made macaroni I just started with a white bechamel sauce and went from there. I think I did gouda + sharp cheddar.)

I learned how to make dope oven baked Mac n Cheese from Good Eats as a kid, was cool.
