For the Alton Brown one, yes if you wanted I suppose you could throw it in a casserole dish and add breadcrumbs and extra cheese and broil it in the oven for a few minutes. (As for pepper I usually add cayenne & chipotle too)
This one is a more involved version of the Alton Brown recipe but it looks very good; it uses sodium citrate to keep the texture smooth.
Hrmm I don't have any non-stovetop recipes on this computer but I'll look around.
