A small amount of American cheese is perfectly fine when added to homemade macaroni & cheese or something like that (I find it helps the texture a little bit without really affecting the taste.)

Any time I've tried to do anything like that it's just ruined the texture and made the food nasty.

I mean yeah, but I've just never had any reason to think that American cheese would work on anything but a cheeseburger.
