I usually go with the ol Chedder and crisp it up a bit.

Cheddar is a solid cheese.

Goes with most things you could use other cheeses for and will do the job well. Some cheeses may do individual things better (mozarella/pizza, parmesan/pasta, processed cheese/burgers and so on), but cheddar is the top all rounder, for me.
