It's "chips", gravy, and cheese curds. I don't know what the difference is between cheese and cheese curds, but it gives me the creeps.

Oh yeah, sorry bout that. I skimmed the wiki page too fast. Just searched cheese curds, we call them mozzarella dippers over here. love em tho.

Well you don't make them sound appealing, with names like "cheese curds", "poutine" and "maple" curry. You're worse than England when it comes to naming things. Which I didn't think was possible.
