Nice dude! I used to make something similar but I stuffed it with chorizo and salsa with mango and corn, great for summer with slaw!

No pics but I had time to make lunch today. Had tacos a couple nights ago used the left over veggies and dressing to make a taco-ish salad.

Salad and Smoothie...

Sour cream, sweet salsa, green chili puree, shredded cheddar cheese, diced tomatoes, and sliced portabella. Mixed together and poured over a huge bowl of red and green sweet butter lettuce.

Papaya, strawberries, blueberries, and orange juice with banana in the ninja served over ice.

Yes please.

Todays lunch. Hebrew National dogs, Chili Man No Bean Chili, Brownberry Potato Bread buns, Frito's and A&W Root Beer. Heaven.

I don't normally take pics of my food, but this was kinda special.

Fried and baked Eggplant Parmesan. Kinda fell apart during the baking process.

There was gravy. Didn't have brown sauce with it though just Worcester Sauce onion gravy.
