Just watched someone cooking Fish en Papillote. This is in my very near future.

Basic concept is the same. White fish fillets steamed inside of a sealed parchment paper pouch. But you can augment it with all different types of veggies, citrus, and seasonings.

Mediterranean version with capers and olives. But you can easily go Italian, Mexican, Indian, etc.

Just finished an aloo matar, basically a potato and pea curry, got two more left and they are cooling down right now. It's really nice, vegetarian.

No pics, just imagine one of the curries I already posted and picture it with potatoes and peas in.
