True-- for a while I went vegan but I apparently (ALLEGEDLY) began eating cheese in my sleep... Cheese and cookies.
But almond milk's way better than cow's milk. What is vegan macaroni & cheese typically made with, anyway? I see cashew cheese being used a lot, though I've never tried it. |

Nothing out there even comes close to replacing cheese. It has been the hardest thing for me. A lot of recipes use nutritional yeast as a cheese substitute.

Just another reason to move out west.. All the vegan cheese products I've tried have been tapioca based and were disgusting. I've heard the nut based cheeses are really good, I'm planning on doing some shopping on Amazon for that kind of stuff.

Today's meal inspired by:
-1/2 jar of Thai red curry paste mixed with enough soy milk (unsweetened) to cover it, and mix. -Add 1 cup chick peas, 1 cup mushrooms to a sauce pan and add the curry mix and a tablespoon of peanutbutter. -Add 1/4 cup of water and cook until evaporated. I also added crushed red pepper, cumin, onion powder, and garlic powder Once cooked, mix in a bag of brown rice and serve. I put this over some fresh raw spinach with a side of mashed potatoes, brussel sprouts, and spaghetti squash. |
