It doesn't really matter - if you can make an instrument sound bluesy/jazzy, then use it!

I think its definately the electric guitar. BB King, Muddy Waters, even Hendrix did some blues songs. And the piano is bluesy aswell. I love Norah Jones' music.

A BIG ol' back-breaking heavy Hammond B-3 organ in skilled hands IMO is the sweetest sound in the world !!!!!

I think bass can be quite bluesy if its allowed to shine through, it just depends on the song. The bass intro on Norah Jones 'Sunrise' was quite an upbeat intro.
