Enjoyment and appreciation are not something people are going to confuse except the OP, I guess.

I actually appreciate most music, but I only enjoy some of it, and sometimes I enjoy music without appreciation for it (pop/rock).

Their is something to be said about recognizing the difference between enjoyment and appreciation when it comes to art.

There is even more to be said about recognizing that we all see things differently in terms of appreciation and enjoyment and appreciating that rather than assuming everyone should feel the same way you do or that you know everyone.

IDK the only thing I can think of is a seeming lack of rhythm, bass percussion, and pattern/organization.

It seems this way because the rock/pop musical rhetoric tends to over simplify all of these concepts. We're used to hearing everything in a straight, well-grounded 4/4, or 3/4 beat, with 3-4 chords, and songs where you can easily predict what the next chord/note will be, or when the chorus is gonna hit.

Jazz forces the listener to listen, actively listen, and recognize complex patterns and organizations, and try to understand the themes which they convey. A lot, but not all, of rock/pop-oriented music relies on words and simplistic structure to tell the listener what the theme is, rather than have the listener use their own imagination, or powers of creative interpretation.
