I pretty much sustain myself on simple three ingredient stir frys over brown rice. Tonight I have kale, onion, and mushrooms sautéed in coconut oil.

Oh right you mentioned that I think; coconut is great for cooking with. (And for everything really. It makes a really good post-shower body oil since it absorbs so quickly)
