I only lost my temper once there. I am of the opinion is that if you treat your staff well and get on with them then they respect you and put that extra effort in when required. The trick is not to be TOO aimiable otherwise they will then just take the piss. Failing that the whip comes out.

I think a lot of chefs are fun to party with. I don't know why this is but seriously all the chefs I've known in my life, and I've known quite a few, really know how to throw down.
