Polvo - Today's Active Lifestyles
Rodan - Rusty Drive by Jehu - Yank Crime June of 44 - Four Great Points Hot Snakes - Audit in Progress tempted to post more but they kinda swerve into post-hardcore territory

I prefer their new album more but it's nowhere near as mathy as their early stuff. Rodan is totally awesome though, bit of a shame they aren't more well-known (considering they came from the same clan that spawned June of 44 and Slint).

As posted by others, I will second/third the following great albums:
Tera Melos - Tera Melos Minus The Bear- Highly Refined Pirates Maps and Atlases- Trees, Swallows, Houses (You and Me and the Mountain is also fun, slightly less good) Slint- Spiderland Polvo - Today's Active Lifestyles (and Celebrate the New Dark Age EP) Rodan - Rusty June of 44 - Four Great Points (their first 2 are great too) I like Drive Like Jehu but I personally don't think they are math rock. Same for Hot Snakes and 65daysofstatic. Don Caballero definitely is, but I have mixed feelings about them. I need to check my home collection for some more recos.

You and Me and the Mountain is certainly a lot different, it's almost like a weird math rock version of Devendra Banhart, but upbeat and catchy.
other gems: Anthology - Colour (collection of demos the band they did when they were active, only full LP by them) The Martial Arts - Cinemechanica Shoot In the Dark - Dakota/Dakota At the Speed of Light and Day - Volta Do Mar Animals - This Town Needs Guns s/t - Sharks Keep Moving (band consisting of Jake from Minus the Bear and Morgan from The Blood Brothers/Past Lives) Variations on Swing - Meet Me In St. Louis |

Ok just checked out the stuff I have tagged as math rock in my digibrary, and here are ones I think are great, that haven't been mentioned. I'm sure I have others I'd suggest that are tagged as "alternative & punk" or something.
LITE - Phantasia Lynx - Lynx (guitarist Dave Konopka is now in Battles...I like Lynx more) Tic Code - Fbccade

Is Minus the Bear really math rock? I mean I guess I can sort of see where you're coming from, but I've never even thought of relating them to that genre.
And I don't think anybody has mentioned Faraquet yet.

Good call on Faraquet, I seem to remember a good bit of people mentioning them when I first joined MB. I'll add Medications to the list, then. To me the two are as much post-hardcore as they are math, though. Blah, all these genres intermix all the time.
