Bruce Willis played in a trad blues band - I saw them live to air on Spanish tv in about 2001. There were actually pretty good - he was playing guitar and singing. Don't recall the name though.

Not quite what the OP was asking for, but there are a number of celebrities who started out doing something other than music, moved into music but I would rather they had not. A couple of former stars of Australian TV soaps come to mind.
