I love my foobar2000 for Windows. However, I can see why it can be frustrating for some people. You really need a bit of know-how and patience to get it to your own liking. Out of the box it looks a little too basic, but once you get your head around how to customise it and figure out how to change scripts you can do anything you want with it. I don't even bother with pre-made skins for it anymore as sometimes they can be overkill and affect performance. I prefer to make my own.
For Ubuntu I use a nice little open-source music player called DeaDBeaF. I've tried quite a few music players for Linux but this one is the best I've come across. It offers some degree of customisation, which is some I feel lacks with a lot of Linux music players and it seems to sound better than the likes of Audacious. I use Poweramp on my phone and it's definitely worth paying the little bit of money for. It looks great and it's very simple to use. I'm not too fond of Android's stock music player.

But thats only because i hate change and Ive used it for so long. I also like the view where you look at all your albums and when you click an album cover it expands and fills with the most prominent color of the album cover.

iTunes on my computer because inertia. On my iPhone, I use the shitty native music app in the car and Rondo (a great app that replicates the experience of listening to speakers in different size rooms) when I'm using headphones.
