My personal favorite is "embryonic journey", by Jefferson Airplane (more specifically by their guitar virtuoso Jorma Kaukonen).

You could also throw SRV's "Lenny" on the list (love Little Wing, but that's really more Hendrix). Zeppelin's got a few but my favorite is "Bron-yr-aur" (not to be confused with Bron-yr-aur stomp).

I saw you like Rodrigo y Gabriela but you didn't include "Tamacun". Find a video of them playing it live. Asombroso!

Genesis - Second Home by the Sea - YouTube (though there are lyrics at the very end)

Joe Satriani - Flying in a Blue Dream - YouTube

I always endorse "Lily was Here."

"Rushed Love" by Gustavo Dal Farra:

He's playing on a 5 string electric bass, no overdubs!

I got tired of Joe quite a few years ago, but this tune is just fantastic, I can't get this rythm out of my head:

Joe Satriani - Light Years Away - YouTube

...and for the ultimate in jam band brilliance:

The allman brothers band - In memory of elizabeth reed (Fillmore East 71') - YouTube
