The Mars Volta, Radiohead, and Pink Floyd have already been mentioned, and they would definitely be on my list. I'm assuming we're only including acts we haven't already seen and not repeats...

I would also add:
Iron Maiden-- their live performances are raved about
Bad Religion
Van Der Graaf Generator
Porcupine Tree
King Crimson-- if they crank out another album and tour again

I saw Gang of Four open for Public Enemy who opened for Sisters of Mercy in '91 when PE was in their prime. It was amazing.
