Pretty much any instrument that is not a guitar, bass, drum kit or keyboard instrument.

The pedal steel guitar is an instrument that despite it's versatility seems to be forever confined to country music. Pink Floyd utilized it in the song One of These Days, and there have been a few other random examples that escape me, but I'd love to see an artist really break out with the instrument.
