Living Colour - Vivid (1988)
Holds up surprisingly well for a late 80's metal album, partly because these guys looked up to Hendrix and Sly Stone rather than Aerosmith or Duran Duran. Funky, catchy riff fests that you turn up in your car without feeling guilty.

Seal - S/T (1991)
I listened to a lot of this bloke's singles back in grade school, but it was only recently that I came to get an actual album and realize what a rarity Seal is in the music world -- he's commercially viable beyond what normally appeals to me, but at the same time he's definitely more experimental and interesting than most of the trash that was getting exposure back then. Soul, early House and electronica touches...heck, even a few prog. rock moments can be found here on this exceptional debut. Too bad he could never quite live up to his work here in later years.
