I've ran it over a million times in my head. I want a 50's style diner but upscale. Small menu, 7-10 vegan/vegetarian, seasonally mindful, and culturally alternating items that changed biweekly. Quality coffee, a small bar with wines, beers, custom cocktails, etc paired with the dishes of course. 15-20 seats. Open Tuesday-Saturday, 6am-5pm. I'd have a prep crew I trained come in early and do all the ****ty bitch work for me but have them work just 4-6 hour shifts so they don't get burned out. Small crew otherwise, two waiters/waitresses is plenty for a small spot like that. Design would be sleek and minimal but not unnatural and modern looking. Cool music played on a jukebox. After service hours, we'd play movies, theater, poetry, live music, whatever in some backside part of the restaurant. People would probably call it a hipster diner. There's more to go into it and I've got a long ways to go before I'd feel comfortable launching something like that but one day, man. One day. It's all in the mind's eye.
